I’m no food blogger and I’m definitely no food photographer but I couldn’t resist posting this pie recipe my mom gave me. “Even you can make this”, she said. I took no offense whatsoever. I don’t enjoy cooking and I don’t bake often. But I do like pie! Super easy, super YUM.
Here’s the recipe:
1/2 cup sugar
2 Tbs. cornstarch
1/2 cup water
4 cups blueberries
9″ pre-made pie crust (I used the kind you buy in a roll, then bake)
In a microwave safe bowl, combine sugar, cornstarch and water. Stir to mix. Cook on High in microwave for 2 minutes or until mixture boils 1 minute. Mixture should be thick, stir.
Stir in berries, cook on High for 3 minutes, stirring once. Pour into baked crust. Cool.
Delicious served with vanilla ice cream. I’ve made this pie twice, once with blue berries from our New Hampshire vacation and once with blueberries and blackberries from the local farm stand. Everyone in my family loves this pie. Although maybe it should be called the 10 minute berry pie: 5 minutes to make it, 5 minutes to eat it. It disappears fast!
