Hello everbody! Isn’t it exciting that Betz has been stitching and sharing for 10 years!! I really think of her iconic wool cupcakes as the beginning of a conversation about sustainable stitches; a conversation that is still going and has expanded dramatically in the years since. I distinctly remember when her book Sewing Green was released. It felt to me like a revelation that using repurposed fabric and organic materials could be so beautiful. It wasn’t dumpy or dull, it was lush, gorgeous, colorful and fun. Thank you Betz!

Cool Whip Icing | Cupcake Celebration

I think of Betz as a leader in the movement toward repurposed materials in the DIY world and it’s been thrilling for me to get to know her over the years. For that reason I decided to throw a cupcake party and I’m sharing a family icing recipe for the first time!

Cupcake Celebration | a happy stitch

Most likely, you are imagining a complicated, all-natural icing that has been handed down for generations. And, I should start by shattering that myth. I grew up in the 80s when Cool Whip was king. There is nothing all-natural about this recipe but it does have many merits. One, it is gob-smackingly delicious. Seriously. It has just the right amount of sweetness, is incredibly light and so,so tasty. Two, it takes about 3 minutes to make. These are the reasons it is a family favorite. So, let go a little and enjoy this delicious and slightly naughty icing.

To prepare it, make your best chocolate cupcakes, at least a dozen. This icing is best on chocolate. Gather the following ingredients:

  • 8 ounce container of Cool Whip
  • 1/8 cup powdered sugar
  • 1 package vanilla instant pudding
  • 1 cup milk

Prepare the vanilla pudding by adding the milk to the pudding mix and whisking for 2 minutes straight. Whisk in powdered sugar. Lastly, fold in the full container of cool whip. That’s it! Pipe that good sweet stuff onto your cupcakes and enjoy! It’s a cupcake party!!
